STRAWBERRY DAIQUIRI
2 OZ LIGHT RUM
SQUEEZE OF LIME JUICE
1/2 OZ TRIPLE SEC
DASH OF GRENADINE
1 OZ STRAWBERRY BOL
1 CUP OF ICE (CRUSHED IF POSSIBLE)
3 STRAWBERRIES
MIX ALL INGREDIENTS IN A BLENDER UNTIL SMOOTH.
POUR INTO A TALL GLASS AND GARNISH WITH A STRAWBERRY
Tapas Recipe
Grilled Scallops with Sweet Chilli Sauce & Crème Fraiche on a Toasted Croûte
Makes 10
5 Sea Scallops
Salt & Black Pepper
2 tbsp Thai Sweet Chilli Sauce
10 Round Croûtes (2 inches)
3 tbsp Crème Fraiche
10 Coriander Leaves to garnish
Method
Cut each scallop in half
Preheat grill pan
Sear scallops for 1 minute per side, add salt & pepper to taste
Toss with Chilli Sauce
Place 1 scallop half onto each Croûtes
Top with 1 tsp Crème Fraiche
Garnish with Coriander
Serve at room temperature on chilled plate
